I’ve made this twice in the past two weeks, so I thought I”d better mention it for future reference! Since my son had a field trip at an Apple Orchard, we came away with a lot of apples! What a better use for them but some of these yummy “desert” muffins. I love cinnamon sugar and the apple chunks inside are just a wonderful surprise in every bite.
Apple Strudel Muffins
Servings: 12 muffins
Ingredients
- 2 cups flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup butter unsalted
- ½ cup sugar
- 2 each eggs
- 1¼ tsp vanilla
- 1½ each apples chopped, cored
- ⅓ cup brown sugar packed
- ⅛ tsp cinnamon ground
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Grease or line a 12-cup muffin tin with paper liners.
- Mix flour, baking powder, baking soda, and salt in a medium bowl.
- Beat sugar, butter, and eggs together in a large bowl until smooth. Mix in vanilla. Stir in apples, then gradually blend in flour mixture. Spoon batter into the prepared muffin cups, filling each 2/3 full.
- Make topping: Mix brown sugar, flour, and cinnamon in a small bowl. Cut in butter until mixture resembles coarse crumbs. Sprinkle over each muffin top.
- Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, about 20 minutes. Let sit 5 minutes before transferring muffins to a wire rack to cool.
