I was hosting our club’s meeting for The Thirteenth Tale by Diane Setterfeld, so I found a food related to the book and made Chicken Salad Croissants. I also made some ghost-shaped sugar cookies (since it’s a ghost story of sorts), which needless to say, were also a hit.

Chicken Salad Sandwiches

a mayo-based chicken and grape salad to be eaten on crackers or croissants

Ingredients

  • 2 cups cooked chicken shredded or chopped
  • 2 each scallions white parts, chopped
  • 2 stalks celery chopped
  • 1 cup grapes cut in half
  • 1 tsp celery seed
  • 2 tbsp fresh dill chopped, or use dill relish
  • 2 tbsp lemon juice
  • 1 cup mayonnaise add by ¼ cup and stop when salad is the right consistency
  • ½ cup slivered almonds toasted
  • salt
  • pepper
  • Croissants for serving
  • lettuce optional, for serving

Instructions

  • Prepare chicken, grapes, celery, and scallions an mix in a bowl.
  • Toast the slivered almonds and add to mixture.
  • Add dill, lemon juice, and celery seed to the mixture.
  • Add mayonnaise ¼ cup at a time until mixture is desired consistency.
  • Add salt and pepper to taste.
